Mango Mojito Recipe
Ingredients:
- 2 oz. Yolo Rum Silver
- 1 oz. Mango juice
- 1 oz. Simple syrup
- 3 Lime wedges
- 2 Large chunks of fresh mango
- 3 Sprigs of mint
- Soda water as necessary
Directions:
In a cocktail mixer, add lime wedges, two chunks of mango, two mint sprigs, and muddle for approximately 20 seconds or until ingredients are well crushed, enough, so you get the juices from the fruit and mint. Add in the mango juice, Yolo Silver Rum, and simple syrup, add ice, and shake for about 10-15 seconds to ensure that all ingredients are well blended. Pour into a tall glass and top off with soda water, add a mint sprig for garnish, enjoy!
Sweet & Spicy Mango Wings
Ingredients:
- 1 mango chopped in small chunks
- 1 jalapeno cut into strips (remove seeds)
- 4 pounds fresh (not frozen) chicken wings
- 1 cup heavy cream
- 2 tablespoons Kansas City rub
- 1 cup chopped parsley
- 2 tablespoons olive oil
Directions:
After rinsing chicken wings in cold water, soak them in milk for at least 1 1/2 hours. Preheat the oven to 400F degrees. After the wings have soaked, coat them in the Kansas City rub. Bake the rub-coated wings for 40 minutes.
While the wings are baking, add mango chunks, chopped parsley, cut jalapeno, and add heavy cream in a food processor. Pulse approximately one minute until thoroughly blended and has a smooth, creamy consistency.
Remove the wings from the oven after 40 minutes and soak the wings in the sweet & spicy mango jalapeno sauce. Bake the wings for another 20 minutes. Serve with celery sticks and blue cheese. Enjoy!
